Magnificent Meatballs
4 lb. ground beef
4 c. canned tomatoes with juice
2 c. fine breadcrumbs
2 eggs
3-1/2 tsp salt
1-1/2 tsp ground black pepper
1 tsp oregano
1 tbsp finely chopped onion
24 slices bacon
1-1/2 c. sour cream
Mix together: beef, 2 cups tomatoes, breadcrumbs, eggs, salt, pepper,
oregano and onion. Form into 24 meatballs (3-inches). Wrap each with
bacon slice, overlapping bacon. Place meatballs into large flat baking
dish or roasting pan so that overlapped bacon is on bottom. Bake at
dg350 for 45 minutes or until bacon is crisp. Remove from oven and
pour off bacon fat.
Combine sour cream and remaining 2 cups tomatoes, pour over meatballs
and return to oven. Turn off heat. Serve with rice when sauce is hot.
To reheat from refrigerated state, place in dg275 oven for 30-40
minutes.
