Diabetic, GREEK TUNA SALAD PITA POCKET

INGREDIENTS

 

-  1 cup washed ready-to-eat Romaine lettuce

-  1 cup cucumber pieces (1/2 inch)

-  1/2 cup tomato pieces (1/2 inch)

-  6 ounces canned white meat tuna packed in water,

   drained and flaked (scant 1 cup drained)

-  8 pitted black olives, cut in half

-  2 tablespoons "Paul Newman's Oil and Vinegar Salad Dressing"

-  2 whole-wheat pita breads

-  1 ounce crumbled feta cheese (2 tablespoons)

 

DIRECTIONS

 

Place lettuce, cucumber, tomato, tuna, and olives in bowl

and toss with dressing. Cut pita bread in half and open

pockets. Fill pockets with salad. Sprinkle feta cheese on top.
