LEMON SPONGE
1 & 1/2 lemons, grated rind and juice
3 eggs separated
1 cup sugar
1 cup milk
2 Tbs self-rising flour
Beat the sugar with the yolks until fluffy. Add the juice, rind, and
flour. Mix well. Add the milk and stir well. Beat the whites of egg till
stiff and fold into the mixture. Pour into a shallow ovenproof dish.
Place in a bain marie and cook in a medium oven for 40 minutes or until
the top is brown. Serve warm sprinkled with icing sugar, and cream on
the side.
