Atlantic Salmon Tartar Aromatized with Two Mustards and Ginger

Yield: 2 
Ingredients: 
        1/2      x  240 g extra fresh boned salmon, fillet, diced 
          1      x  green shallot, minced 
          3    tbl  extra virgin olive oil 
      1 1/2    tbl  lemon, juice 
        1/2    tbl  fresh ginger, minced 
          1    tsp  Dijon mustard 
          1    tsp  grainy mustard 
          1    tsp  ginger juice 
                    salt 
                    tabasco sauce 
          1    tsp  trout caviar 
          1    cup  mixed young greens 
Method:
In medium bowl combine all of the ingredients to make a vinaigrette.
Reserve half the mixture. Add half the mixture to the diced salmon with
the green shallot.
Mix well, and mould the tartar on cold plates, sprinkle the trout caviar
nicely. Add the mixed greens and the remaining vinaigrette.
