Orange-Chile Tilapia

Yields: 2 servings"Tilapia fillets are rubbed with a hot spice mix,
sprinkled with orange zest, and baked. I serve these with chili garlic
sauce as a dip."
INGREDIENTS:
4 (4 ounce) fillets tilapia fillets
2 tablespoons olive oil
2 tablespoons chili powder
1 teaspoon garlic powder
1 tablespoon cayenne pepper
1 tablespoon ground cumin
1 tablespoon grated orange zest
DIRECTIONS:
1.Preheat oven to 350 degrees F (175 degrees C).2.Place the tilapia
fillets in a glass baking dish and rub on all sides with the olive oil.
Stir together chili powder, cayenne pepper, and cumin in a small bowl.
Sprinkle the tilapia on both sides with the spice mixture, then sprinkle
orange zest over top.3.Bake in preheated oven until the tilapia is no
longer translucent and flakes easily with a fork, about 15 minutes.
