Zucchini Casserole
3 to 4 zucchini, sliced
1 onion, sliced
1/2 lb. ground beef
1 pint spaghetti sauce
1/2 c. grated Cheddar cheese
1/4 c. Parmesan cheese
Preheat oven to dg350. Grease a 2-quart casserole. Place sliced
zucchini in casserole, layer with sliced onion. Spread ground beef
over onion layer. Pour 3/4 of spaghetti sauce over beef. Sprinkle with
Cheddar cheese. Pour remaining spaghetti sauce over cheese. Top with
Parmesan cheese. Cover and bake for 50 minutes. Uncover and bake 10
minutes more until cheese is browned.
Serves six.
