Zucchini Bake
1/2 lb. lean ground beef
3 c. zucchini, sliced
3 c. cooked rice
1 c. grated jack cheese
4 eggs, beaten
3/4 c. milk
1/2 tsp salt
1/2 tsp pepper
1/2 tsp basil
1/2 tsp oregano
1/2 tsp garlic powder
1 c. chopped onion
1 garlic clove crushed
1 15-oz. can tomato sauce
Cook onion and garlic in large skillet until brown. Drain. Add
zucchini. Cover and simmer 5 minutes. Combine next 4 ingredients with
salt and pepper. Stir into meat mixture. Turn into 13 by 9 inch
casserole. Bake at dg350 for 30 minutes or until set.
Simmer tomato sauce with seasonings. Serve over zucchini bake.
Makes 6-8 servings.
