NANCY'S RING OF COCONUT FUDGE CAKE

CAKE:

2 c. sugar
1 c. oil
2 eggs
3 c. flour
3/4 c. unsweetened cocoa
2 tsp. soda
2 tsp. baking powder
1 1/2 tsp. salt
1 c. hot coffee
1 c. sour milk
1 tsp. vanilla

FILLING:

8 oz. cream cheese
1 tsp. vanilla
1/4 c. sugar
1 egg
1/2 c. coconut
6 oz. chocolate chips

Grease and flour tube pan. Prepare filling, set aside. Combine sugar, oil and 
egg; beat 1 minute at high speed. Add remaining ingredients. Beat 3 minutes
on HIGH. Pour 1/2 batter into pan. Spoon on filling. Add remaining batter. Bake 
350 degrees for 70 to 75 minutes. Cool upright in pan 1/2 hour. (Sour milk
= sweet milk with 1 tablespoon vinegar or lemon juice)

Store in refrigerator, frost or serve with whipped cream.  Enjoy.
