GUAVA STUFFED CHICKEN BON APPETIT

 

1/4 c.               Olive oil

1/4 c.               Lemon juice

6                      Garlic cloves

2 t.                   Thyme

6                      Chicken breasts

4 oz.                 Cream cheese

2 T.                  Guava paste - 1.5 oz.

1                      Mango, cut into slices

Seasoned flour for dredging -- 2 cups should do it.

Mix first 4 ingredients & marinate chicken in mix for at least

2 hours.  Mix cheese & guava paste; chill till firm.

Slice pocket in each breast to create a cavity and insert

cheese mixture w/pastry bag; close & secure w/toothpicks;

dredge breasts in seasoned flour and sauté till browned.

Melt 2-3 T. butter in skillet add mango slices till brown.

Cut breasts into thick slices and serve w/mango sauce
