Italian Roast Chicken and potatoes

 

Description

This is a dish I knd of made up, adapted a recipe I saw in a

newspaper Sunday magazine and jazzed it up with garlic powder, &

Italian spices

 

Ingredients

1 7-8 lb roasting chicken

6-8 thinly sliced potatoes (depends on how many you are feeding)

1 cup of milk

Butter or margarine

Italian spices

Garlic powder

Olive or vegetable oil

 

Directions

Preheat the oven to 350 degrees. Take an 9 x 12 glass baking

dish and rub butter or margarine all around the inside of the

dish. Peel and slice the potatoes and cook on the stove in water

and the milk until they are almost cooked. Then layer the

potatoes in the dish, sprinkling Italian spices and garlic

powder on each layer to taste. Unwrap and rince the chicken,

remove giblets, then place the chicken on top of the potatoes in

the dish. Season with oil garlic powder and the spices to taste.

Put it all in the over and bake until the chicken is totally

cooked. Then remove the chicken from the potatoes and place the

potatoes back into the oven to brown to your liking. Then serve.

(The baking time varies on the chicken, so do not go by what I

put below)

Cook Time: 1 Hr 30 Min

Total Time: 2 Hr
