Bayouside Catfish
2 Catfish Fillets 1/4" to 1/2" thick 4 Slices Potatoes 1/4" thick 4 Slices Onion 1/4" thick 1 Sprinkle of seasonings (Cajun or Creole Seasoning)or Salt and pepper to your taste Place all ingredients in foil bag or wrap in heavy duty aluminum foil and seal air tight. Place over hot coals and cook for 5-7 minutes (foil will puff up like the old Jiffy Pop popcorn). Take off coals and let sit off heat for 10 minutes. Unwrap and enjoy!
