Southern Living Sweet Potato Pie

 

I found this in Southern Living magazine several years ago, &

have made it many, many times. Everyone always ask me to make it

for holidays.

 

Preheat oven to 350

5-6 sweet potatoes, I bake them, to me they are much better

baked than boiled, or in can.

1 small can evaporated milk

1 1/2 cups of sugar

6 eggs

1 tsp. cinnamon

1 tsp. nutmeg

2 tsps vanilla

1 cup butter

2 deep dish pie crusts from grocery store, you can make your

own, but this is what I do, & what the recipe listed.

 

Beat all together with mixer till well blended, no lumps,

important to get all lumps out.

Cover pie edges with aluminum foil so edges won't burn.

This recipe usually makes 2 pies, depending on the size of the

potatoes. Cook pies 50 minutes, & then while keeping an eye

on them, cook for about 15 more minutes, or until the pies begin

to brown on top. When they begin to brown they will be done,

however, if you take them out earlier than this, they won't

thicken, they will be a bit mushy if not browned. Still tasty,

but better when cooked till done. Serve with cool whip.
