Old Tavern Corn Fritters
1 cup all-purpose flour
1-1/2 tsps baking powder
2 eggs
1/3 cup milk
1-15oz can whole kernel corn, drained
1 T butter or margarine, melted
Oil for deep-fat frying
Confectioners sugar
Maple syrup, warmed
In a bowl, combine flour and baking powder; set aside.
In another bowl, beat the eggs and milk; stir in corn and butter.
Stir into dry ingredients just until blended.
In a deep-fat fryer or electric skillet, heat oil to 375ยบ. Drop
batter by heaping teaspoonfuls into hot oil; fry for 2-3 minutes or
until golden brown. Drain on paper towels. Dust with confectioners
sugar.
Serve with syrup.
Makes about 2 dozen
