Sausage Hash

1 # bulk pork sausage
1 medium onion, chopped
2 medium carrots, grated
1 medium green pepper, chopped
3 cups diced cooked potatoes
1/2 tsp salt
1/4 tsp pepper

In a skillet over medium heat, brown the sausage. Add onion,
carrots and green pepper; cook until tender. Stir in potatoes, salt 
and pepper. Reduce heat; cook and stir for 20 minutes or until 
lightly browned and heated through.

Makes 6 servings
