RHUBARB BUTTERMILK MUFFINS 3/4 c. brown sugar 1/2 c. oil 1 egg 1/2 c. buttermilk 1/2 tsp. salt 1 tsp. vanilla 1 1/2 c. flour 1/2 tsp. soda 1/2 c. nuts 1 c. finely chopped rhubarb 1/4 c. brown sugar 1/2 tsp. cinnamon 1/4 c. nuts
Mix first ten ingredients in order given. Before baking sprinkle with mixture of brown sugar, cinnamon, and nuts. Bake at 325 degrees 30-35 minutes. Makes 16-18 muffins.
