Lemon Coconut Bar Recipe 1 cup 1/2 teaspoon 1 teaspoon 1 1 1/2 teaspoon 1/2 cup 2/3 cup 3/4 cup 1 cup 1 teaspoon 1 tablespoon 1/2 teaspoon 2 tablespoons 1/2 cupflour salt vanilla egg lemon rind, grated baking powder brown sugar, firmly packed shortening rolled oats powdered sugar lemon juice milk vanilla butter flaked coconut Oven Temp: 350° Cooking Time: 25 minutes Pan Type: 8" square pan Preheat Oven. In a large mixing bowl, cream together shortening, brown sugar, vanilla and egg. Add flour, salt, baking powder, oats and lemon rind and mix well. Spread into pan. Bake for allotted time. Frosting In a mixing bowl add butter and beat until creamy. Add milk ,lemon juice, and vanilla and mix on low setting of mixer. Add powdered sugar and beat until smooth. Frost cooled cake and top with coconut and serve with your favorite drink. Serves: 12 – 16
