Date Filled Cookie Recipe 1 cup 2 cups 3 large 1/2 cup 2 teaspoons 3 1/2 cups 1/2 teaspoon 1 teaspoon 1/8 teaspoon 2 cups 3/4 cup 3/4 cup 1 cup 1 teaspoonbutter brown sugar eggs water vanilla flour salt baking soda cinnamon dates, pitted and chopped sugar water walnuts, chopped fine vanilla Oven Temp: 350° Cooking Time: 10 to 12 minutes Pan Type: cookie sheet Preheat Oven. In a large mixing bowl cream the butter and brown sugar together until fluffy. Add the eggs, water and vanilla and beat well. Add the flour, salt, baking soda, cinnamon. Mix until all the dry ingredients are moistened. Filling In a small saucepan combine the dates, sugar, water, nuts and vanilla. Bring mixture to a boil over medium heat while stirring constantly. Cook until mixture is thickened. Drop about 3/4 teaspoon cookie dough and top dough with about 1/2 teaspoon of filling and place another 3/4 teaspoon of dough on top of the filling. Bake for the allotted time. Cool and serve with your favorite drink. Serves: 36
