Florida White Fruitcake

 

2 sticks margarine

1 c. Sugar

5 large eggs

2 tsp pure lemon extract

1 tsp pure vanilla extract

1 3/4 c. Plain flour

1/2 tsp baking powder

8 oz. Green candied cherries

8 oz. Red candide cherries

16 oz. Candied pineapple

16 oz. Pecans (4 c)

 

In a large bowl, mix baking powder and flour with fruit and

nuts. In another bowl, mix together.. Eggs, sugar, lemon, and

vanilla. Extract with butter. Mix with mixer. Pour mixture over

flour, fruit, and nut mixture.. Stir until well blended. Pour

into a greased bundt pan. Place is cold oven. Bake at 250

degrees for 2 1/2 hours. Let cool for 15 minutes prior to

removing from pan.

 

Note- Many people put small amount of orange juice, brandy

extract, brandy or personal preference on cake.. Wrap well, and

store in cool place until ready to serve.  (I used Kentucky

Bourbon)
