ZESTY SAUSAGE MEATBALLS

 

Yield: 12 servings

"Mr. Food's Every Day's a Holiday Diabetic Cookbook"

 

INGREDIENTS

-  1 pound ground pork

-  1/2 cup plain bread crumbs

-  1/4 cup water

-  1 small onion, chopped

-  1/4 cup chopped fresh parsley

-  1 teaspoon crushed fennel seed

-  1/2 teaspoon garlic powder

-  1/4 teaspoon ground red pepper

-  1/2 teaspoon salt

-  1/2 teaspoon black pepper

 

DIRECTIONS

Preheat the oven to 350*F. Coat a rimmed baking sheet with

nonstick cooking spray. In a large bowl, combine all the

ingredients; mix well. Form the mixture into 36 one-inch balls.

Place on the baking sheet and bake for 15 to 18 minutes, or

until no pink remains, turning the meatballs over halfway

through baking.
