HONEY-KISSED WINTER VEGGIES

INGREDIENTS:
2-1/4 cups acorn squash, pared, seeded and cut into chunks 1 turnip,
pared and cut into chunks
1 cup julienned carrots
1 small onion, halved and quartered
1/4 cup honey
2 Tbsp. margarine, melted
1 tsp. grated orange peel
1/4 tsp. ground nutmeg
DIRECTIONS:
Steam squash, turnip, carrot and onion over water in covered skillet
about 5 minutes or until tender. Drain. Combine honey, margarine, orange
peel and nutmeg. Drizzle over vegetables. Toss & serve.
Yield: 6 Servings

COOKING WITH HONEY:
Honey provides a special, chewy texture and a more brown color to cakes,
cookies, and bread dough. It is composed chiefly of levulose (fruit
sugar or fructose) and dextrose. Its high liquid content causes great
variability in handling. Honey is available in various flavors, such as:
thyme from Greece, orange blossom from California, and tupelo from
Florida. Darker colored honey may be disagreeably strong. Substitute 1c.
honey for 1 1/4 c. sugar and reduce liquids called for in the recipe by
1/4 c. Store covered in a dry place at room temperature. The texture of
the finished product will be different if honey substituted for sugar.
***Whipped Honey Butter (2 cups) ***
1 cup (12 ounces) whipped or creamed honey, softened if necessary 1/2
pound (2 sticks) butter, softened In a medium bowl, mix together honey
and butter. Spoon into jars with tight-fitting lids. Store in
refrigerator.
