We hope you enjoy this menu that serves 6 to 8.

--------------------------------------------------------------------------

      Appetizer: Veggie Dip
      1 cup plain yogurt
      1 clove garlic, minced
      One half cup mayonnaise
1 cup sharp cheddar cheese, granted
One quarter cup Parmesan cheese, grated.

Combine all ingredients and chill for about two hours before serving.
Serve with variety of fresh veggies such as broccoli florets, baby asparagus,
celery and carrot sticks, cucumber slices and any other of your favorite
veggies. This dip is quick and easy and very tasty. Get creative with your
veggies and offer a wide selection of choices.

The Skinny: Use low fat yogurt, mayo and cheeses.

      Main Course: Ratatouille
      2 Tbsp. olive oil
      1 large onion, chopped
      3 cloves garlic, minced
      3 cups eggplant, chopped
      3 cups zucchini, chopped
      3 tomatoes, chopped
      One half cup parsley, chopped
      1 cup water
      Salt and pepper
      1 pound penne pasta
      1 cup Parmesan cheese, grated

Heat olive oil in large pot. Cook onion and garlic in olive oil until
tender. Add eggplant and simmer for 10 minutes. Add zucchini, tomatoes, parsley
and about 1 cup of water.

Salt and pepper to taste. Simmer on low/medium heat for about 30 minutes
until vegetables are tender, stirring frequently. You may need to add just a
little more water as the dish cooks down. Meanwhile cook pasta according to
package directions until just al dente. Drain pasta and spoon into bowls. Spoon
ratatouille over pasta and top with cheese. This dish is perfect for those cold
winter nights when you want something nice and warm but also light so that you
have plenty of energy to hang lights and wrap presents.

The Skinny: You really cannot get much more healthful than this. As one
alternative, you could add low fat chicken broth instead of water to get a
different taste.

      Potato Rolls

      4 cups all-purpose flour
      1 tsp. salt
      2 Tbsp. baking powder
1 cup butter, cut into pieces
      1 cup cooked, mashed potato
      1 cup buttermilk
      1 Tbsp. sugar

Combine flour, salt and baking powder. Add butter and mix until crumbly.
Add remaining ingredients and mix well. Place dough on a floured surface and
roll out to 1/2 inch thick. Cut rolls with round cookie cutter and place on a
greased cookie sheet. Bake at 400 degrees for about 15 minutes or until lightly
browned. These go great with the main course.

The Skinny: Not much room for improvement. Don't substitute for the
buttermilk.it is necessary to get the proper result with this recipe

      Dessert: Fruity Tapioca
      2 - 3 oz. packages tapioca pudding
      2 cups orange juice
      Three quarters cup pineapple juice
1 can chunk pineapple, with juice
1 cup seedless or seeded tangerine sections
      1 cup seedless green grapes
      2 cups sliced bananas
      Three quarters cup whipped topping

Cook tapioca pudding then mix with orange and pineapple juice. Let it
cool. Add remaining ingredients and refrigerate for several hours. This dessert
is light and tasty.

The Skinny: You can probably get low fat or light tapioca. We know you
can get reduced sugar orange juice. Use low fat whipped topping.

      Tales from the ArcaMax Chef
Last time I advised y'all regarding the passing of our beloved 16 year
old Miniature Schnauzer, Shelby.

She-Who-Must-Be-Obeyed (my wife) has been hit very hard by Shelby's
passing. She was Shelby's number one human and they did everything together.
So, when She told me She had found a special place in the back yard for Shelby,
I promised to make it happen.

The spot is between two beautiful River Birch trees and in front of some
tall fir trees. There is plenty of room for flowers and a little memorial
stone. I agreed that it was the perfect place.until I tried to get a shovel in
the ground at this "perfect" place.

I stomped on the shovel, I jumped on the shovel, I stood on the shovel
and hopped up and down like a pogo-stick. Despite my best efforts, I could not
get the shovel to go more than an inch or two into the ground. As it turns out,
the "perfect" spot had two slight imperfections.hundreds, if not thousands of
roots and good old Southeastern Virginia clay that had, over a few millennium,
packed down as hard as cement.

I tried a post hole digger (the manual kind) a pick ax and a regular ax
to no avail. The best I could manage was to scratch that hard clay and dent a
few roots.

Then I had a great idea and a plan (The long term subscribers probably
cringe whenever they hear about me and a "plan"). I would rent one of those gas
powered post hole diggers. I could dig a bunch of deep holes all around the
"perfect" place and then connect them into one big hole!

I called the local equipment rental place and asked about renting the
biggest post hole digger they had. It was pretty expensive but money was not an
object at this time. The sales person inquired about my personal
information.name, address, etc. Being naturally chatty and quite pleased with
myself and the "plan", I began describing the plan to the sales person. "There
are so many roots where I need the holes that I couldn't get through them with
an ax", I explained. "I'm going to use the post hole digger to cut holes
through the roots and then connect all the holes into one big hole." There was
silence on the line.

"You can't use a post hole digger to cut through roots, sir", the former
sales person explained. Now I was trying to back track. "I wasn't really
planning on cutting through the roots", I lied, "The plan was to dig the holes
between the roots."

"Sir, if you attempt to use the post hole digger to cut through or
between roots, it will corkscrew into the ground. We will then have to send a
crew out to unscrew it. Also, you will more than likely burn out some bearings
and/or the motor. Not only can you not use the post hole digger as you plan,
but now that we know about your plan, we must decline to rent it to you."

I hung up the phone and started to look in the telephone book under
"dynamite".

      God Bless America.

      Enjoy!
