One Pan Potato Dinner
8 to 10 medium potatoes sliced 1/8 thick
12 eggs slightly beaten
2 cups diced ham
1 large sliced onion
1/2 cup oil
salt and pepper to taste
1/2 cup diced green pepper (optional)
heat oil in skillet
add potatoes, ham, onion, salt and pepper
cook till potatoes are tender
add eggs and cover and cook till eggs are done
turning as needed. serve
