BROWN RICE WITH VEGGIES
2 cups broccoli and/or cauliflower florets

1 chopped onion

1 tsp Southwest seasoning

1 tbs olive oil

1 cup brown rice

2 cups water

In saucepot, cook broccoli in enough salted water to cover 5 min. In skillet, 
cook onion and seasoning in oil 5 min. Add rice, stir, cook 5 min. or until 
rice is transparent. Stir in 2 cups water. Bring to a boil, reduce heat, cover, 
cook 18 min. Stir in florets. Cook 5 min. MAKES 8 SERVINGS.*
