Bacon and Avocado Quick Bread

Ingredients: 
          2      x  rashers bacon 
          1      x  onion 
          1      x  avocado 
          2    cup  flour 
          4    tsp  baking powder 
          2      x  eggs 
          1    cup  milk 
        1/2    cup  grated tasty cheese 
        1/4    cup  basil pesto 
          2      x  tomatoes 
Method:
Remove rind from bacon and chop flesh finely.
Peel onion and chop finely.
Remove skin and stone from avocado. Chop flesh roughly.
Sift flour and baking powder into a bowl.
Beat eggs and milk together.
Add cheese and combine.
Toss bacon, onion and avocado through flour mixture.
Add egg mixture and combine.
Pour into a baking paper lined bottom 20cm cake tin.
Bake at 200 C for 30 minutes or until cooked through.
Stand 5 minutes before turning out.
Cut in half horizontally.
Spread base with pesto.
Slice tomatoes and place over pesto.
Place top of bread on. Cut into wedges to serve
