Chicken Balls
2-boneless, skinless chicken breasts cut into 1" cubes
1-cup water
¼-cup white wine
1-tsp sugar
Mix all ingredients and bring to a boil
Simmer for 20 minutes or until chicken is fork tender
Drain very well and let cool
Batter
2-eggs, slightly beaten
½-cup flour
½-cup cornstarch
1-tsp salt
¼-cup water or chicken stock
1 ½-tsp baking powder
Mix all ingredients to a smooth paste
Dip chicken cubes in batter and deep fry
Drain oil on paper towels
Keep chicken balls warm in the oven until all are cooked.
