CHUTNEY CHICKEN &COUSCOUS
1 tbs vegetable oil
4 boneless skinless chicken breasts
1 tsp curry powder
1/2 tsp salt
1/2 cup orange juice
1/2 cup mango chutney
1 1/2 cups chicken broth
1 1/2 cups plain couscous
Heat oil in a skillet. Season chicken with 1/2 tsp curry powder and 1/4
tsp salt. Saute 4 min. per side. Remove from skillet and reserve.
Add orange juice and chutney and stir, scraping up any brown bits. Add
the chicken back in and simmer covered 4 min. or until done.
Place broth and remaining curry powder and salt into a saucepan. Bring
to a simmer. Turn off heat, stir in couscous. Cover, let sit 5 min.
Fluff couscous and place on serving platter. Slice chicken and fan out
over couscous. Spoon sauce from skillet over the top. Serve with
additional chutney on the side. MAKES 4 SERVINGS
