COCONUT POTATO FUDGE
1 medium sized boiled potato 2 c. powdered sugar 1/8 tsp. salt 1 c. coconut 1/2 tsp. vanilla 3 sq. unsweetened chocolate Mash potato. Add salt, sugar and coconut. Mix well, add vanilla and mix again. Press into a 6 x 6-inch square pan which has been lined with waxed paper. Melt chocolate over hot water and pour over potato mixture. Let stand until firm and cut. I also substitute finely ground pecans for coconut. Enjoy!
