Herbed Chicken Roll-ups Serves 6 (1 roll-up each). | Source: Lori Willett, Cedar Rapids #6 (IA) dietitian. 1 (1.5 lb) pkg Hy-Vee Natural chicken tenders 6 tbsp 1/3-less fat chive and onion cream cheese, divided 6 slices DiLussoâ„¢ prosciutto or deli-sliced honey ham All you do: Spread 1 tablespoon cream cheese each on 6 chicken tenders. Top with remaining chicken tenders. Wrap one slice prosciutto or ham around the middle of each pair of chicken tenders, leaving ends exposed. Heat a large non-stick skillet over medium heat. Coat with non-stick cooking spray and add chicken. Cook chicken for 5 minutes. Carefully turn chicken. Reduce heat to medium-low, cover; continue cooking 8 minutes, or until chicken reaches 165ËšF. Serve with whole wheat couscous, steamed broccoli, fresh strawberries and milk, if desired. Hint from your dietitian: These roll-ups freeze well. Freeze uncooked; thaw in the refrigerator and cook as directed. These look elegant enough for company yet they are easy enough to do on a weeknight. They go together in a flash!
