Salmon Croquettes
2 (6oz cans salmon) drained
1 (6oz can tuna in water) drained
¼ cup finely chopped onion
2 Tbsp finely chopped green bell pepper
2 eggs lightly beaten
2 Tbsp yellow cornmeal
½ tsp salt
½ tsp pepper
3 Tbsp flour
1 cup Oil for frying
In a medium bowl, combine all ingredients. Stir until just
moistened. Form into 7 patties about 3 inches in diameter by
½ to 1 inch thick. Heat the oil in a medium size non-stick
skillet. Place patties in hot oil. Cook over medium heat for
5 to 7 minutes on each side until golden brown.
Drain on paper towels.
