Pecan Log

 

2 tsp. butter, softened

1 (7 oz.) jar marshmallow cream

1 tsp. vanilla

1 lb. powdered sugar, sifted (4-1/2 c.)

1 (14 oz.) pkg. vanilla caramels

1/4 c. milk

3 c. chopped pecans

 

In small mixing bowl beat butter, marshmallow cream and vanilla

on low speed. Beat in about 1/2 cup powdered sugar to make a

stiff mix. Turn on clean surface and knead. Wrap in wax paper

and chill about 2 hours.

 

2nd Step

In the top of double broiler, mix caramels and milk. Place over

pan of water. Heat until caramels are melted, stirring

occasionally. Cool slightly. Form cream mixture into 4 to 6 inch

logs. Spread chopped nuts on wax paper. With a knife spread

caramel on one side of log. Turn over and spread uncovered side.

Roll in pecans.
