Turkey Casserole With Vegetables
2 c. cooked cubed turkey
3 tbsp butter melted
1/2 c. diced celery
1/3 c. thinly sliced onion
1/3 c. thinly sliced peppers
3 tbsp flour
1-1/2 c. turkey stock
2 lightly beaten egg yolks
minced chives, parsley or nutmeg
Saute in butter onions, celery and green peppers. Sprinkle flour over
top and cook slowly for 5 minutes. Gradually stir in turkey stock.
Remove pan from heat and stir in beaten egg yolks and turkey meat.
Stir over low heat just long enough to let the sauce thicken slightly.
Place mixture in one large or in individual casseroles. Sprinkle the
top with minced chives, parsley or nutmeg. Serve immediately. Good
with rice, spoon bread or over toast.
Makes four servings.
