Bacon-Cheese English Muffins
2 English muffins, split and toasted
2 tablespoons mayonnaise
4 tomato slices
4 onion slices
4 process American cheese slices
4 bacon strips, cooked and crumbled
Spread the muffin halves with the mayonnaise;
top with tomato, onion & cheese.
Broil 4-inches from the heat source
for 3 to 4 minutes or until the cheese is melted.
Top with bacon. Serve warm.

Baked English Omelette
6 Eggs -- beaten
2/3 cup Milk
1/4 teaspoon Salt
1/8 teaspoon Pepper
1 & 1/2 cups Cheddar cheese -- shredded
1 Green onion -- slice thin
3 slices Bacon; cook -- crumble
1 tablespoon Butter or margarine
1 tablespoon Parmesan
Add'l bacon for garnish -- opt
Beat milk into eggs.
Stir in seasonings, cheddar,
onion & bacon.
Melt butter in a 9" inch frying pan.
Pour egg mixture into pan.
Sprinkle with Parmesan.
Bake at 400 for 20 minutes or until set & golden.
Garnish with additional bacon, if desired.
Serve immediately.

BEST EVER BRITISH SCONES
Hot scones, served as they are removed from the oven,
are an English specialty.
A MUST for five o'clock tea.
Serve with butter and jam.
Oven temperature: 425 degrees middle rack.
This is what you'll need for 8 scones:
2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/4 c. butter
3/4 c. buttermilk
In a large bowl, combine flour, baking powder, & salt.
Add butter.
Combine with your fingers, a wooden spoon or a pastry blender
until coarse crumbs form.
Add buttermilk.
Quickly stir to form dough.
Divide dough in half.
Form each half into a ball.
Flatten to a round. Place on lightly greased baking sheet.
Cut each crosswise into 4 pieces but not all the way through.
Bake at 425 degrees for 10-15 minutes.
Serve hot.
Is properly served with Earl Grey tea, of course!

Bubble & Squeak
Here is one recipe we like.
It originally came from a website on British foods
& was created by Duncan and Alice Johnston, a Scottish couple.
Bubble and Squeak
6 large potatoes
1/4 head of cabbage
1/2 cup cooked ham or bacon, chopped
1 large onion, chopped
white pepper
salt
1/4 cup olive oil
Boil & mash the potatoes.
Fry the chopped onions until brown
& add to the mashed potatoes.
Roughly chop the cabbage &
boil in salted water until just cooked.
Drain & add to the mashed potatoes
together with the chopped cooked ham or bacon.
Season with white pepper (black will work too)
& salt to taste.
Allow to cool slightly.
Heat the olive oil in a large skillet.
Shape the bubble and squeak mixture into large balls,
place in the hot oil,
& flatten down with a spatula to make pancake like shapes.
Cook until golden brown, turn, and repeat for the other side.
Serve immediately.
Traditionally, this dish was served sprinkled with vinegar,
though we prefer to omit the vinegar. Good with roasts and poultry.

Cheese Tea Biscuits
2 C. sharp cheese, grated
2 C. flour
2 C. rice cereal
2 sticks butter, softened
1/2 tsp. red pepper
Preheat oven to 350 degrees F.
Mix all ingredients together.
Roll into a roll about 2 or 3 inches thick.
Cover with plastic or aluminum foil
& refrigerate until it becomes hard.
Slice into thin tea biscuits.
Bake in preheated oven on an
ungreased cookie sheet for about 10 minutes. Do not cook until brown
or they will be overdone.
Makes about 36.

CHEESY YORKSHIRE CHICKEN
2 tbsp. + 2 tsp. corn oil
1 (2& 1/4 lb.) chicken, cut in pieces
3/4 c. all-purpose flour
3/4 tsp. baking powder
1/2 tsp. salt
1 c. evaporated skim milk
2 eggs, beaten
2 oz. grated cheddar cheese
2 tbsp. minced onions
2 tbsp. parsley flakes
Preheat oven to 400 degrees.
Place oil in 12" round casserole with 3" sides;
add chicken pieces & turn to coat with oil.
Bake for 40 minutes or until fork tender.
Yorkshire Pudding:
In medium bowl,
sift flour, baking powder & salt.
Beat in milk & eggs
then fold in remaining ingredients.
Remove chicken from oven, pour pudding mixture over chicken.
Return to oven & bake 20 minutes until puffed & brown.

ENGLISH TOFFEE CANDY
1 c. sugar
1 c. butter
3 tbsp. water
1 tsp. vanilla
4 or 5 Hershey chocolate bars
Chopped nuts
Combine sugar, butter & water in heavy saucepan.
Cook to 300 degrees (hard crack stage)
stirring constantly to prevent burning.
Add vanilla & pour into a buttered 9 x 9 inch pan.
Lay the chocolate bars on top & spread them evenly as they melt.
While still warm
sprinkle chopped nuts over the top.
Cool thoroughly & break into pieces.
