1,2,3 Hors D'oeuvres
makes 70 peaces a bout the size of a quarter to a halfe dollar
1 lb combonation hot and miled pork sausage or all hott
2 cups finely graded sharp cheddar cheese
3 cups bisquick mix
combine all ingredients, roll into balls the size of a marvel.
freeze or refrigerate
to serve bring to room temperature.
bake in shallow pan, at 3 50 degrees,
for 15 to 20 minutes, or untill golden brown on bottum.

SCALLOPED POTATOES Diabetic
Yield: 5 servings
1 lb Potatoes; (about 3 md)
2 tb All-purpose flour
1/2 ts Salt
1/2 ts Freshly ground pepper;
2 tb Margarine;
3 tb Onion; finely chopped
Hot water
Preheat oven to 400 F degree.
Prepare a 1 1/2 qt casserole with vegetable pan coating.
Pare potatoes; slice potatoes crosswise in 1/8-inch slices: if
potatoes are large, cut slices in half in half.
Mix together flour, salt, & pepper.
Place half of the potatoes in prepared casserole dish.
Dot with half the margarine,
sprinkle half the seasoned flour on top,
then half the onion.
Repeat with remaining potatoes,
margarine,
seasoned flour,
& onion.
Pour enough hot water in, at one corner
only, so that the water barley comes to the top of the potatoes.
Cover & bake 50 minutes; then uncover &
bake for another 25-30 minutes or until potatoes are browned & tender.

Baked Potato Skins DIABETIC

4 medium potatoes
1/2 cup grated fat-free cheddar cheese
3 tablespoons very lean, cooked bacon bits
1/4 cup minced green onion
Scrub potatoes and pierce each with a fork. Bake in a preheated
400 degree F oven until soft; about 1 hour. Cut potatoes in
half lengthwise and scoop out centers, leaving a 1/4 inch shell.
(Reserve removed potato for another use.)   Cut potato halves
lengthwise. Spray potato shells with butter-flavored spray, then
place on a large baking sheet. Bake in a preheated 500 degree F
oven for 15-20 minutes, until brown and crisp.  Sprinkle evenly
with cheese, bacon bits and green onion. Return to 400 degree F
oven for 3 minutes longer to melt cheese.
Makes 6 servings.

Apple Pie Like Your Grandmother Used To Make Diabetic
Pastry for 9 inch two-crust pie
   2      tablespoons   Equal® MeasureT OR
  20      packets       Equal®
     1/4  cup           flour
     1/4  teaspoon      nutmeg
     1/2  teaspoon      cinnamon
   1      dash          salt
   6      cups          tart apples (4-6) Granny Smith -- 
pared&thinly sliced
   1      tablespoon    margarine
Preheat oven to 425 F.
In a mixing bowl combine Equal® MeasureT,
flour, nutmeg, cinnamon & salt.
Add dry mixture to apples; toss gently to coat fruit.
Fill a pastry-line 9-inch pie plate with apple mixture;
dot with margarine.
Cover with top crust that has slits cut in it;
seal & flute edge.
Bake 15 minutes at 425F; turn oven down
to 350F & bake an additional 30 minutes.

diabetic sugar free peanut butter cookies
1 & 1/2 cups flour
1/2 cup peanut butter
1/4 cup cooking oil
2 teaspoons sweet & low
1 & 1/2 teaspoons baking powder
1/4 cup water
1 egg
1 teaspoon vanilla
combine ingredients mix well. shape into 1 inch balls.
place on ungreased cookie sheet, flatten with a fork.
bake at 375 for 12 to 15 minutes, or until golden brown.

Frozen Granola Balls
3/4 cup grape nuts
1 1/4 cups uncooked rolled oats
1 cup raisins
1/2 cup peanut butter
4 teaspoons honey
2 teaspoons vanilla
2/3 cup water
Combine ingredients adding water last.
Roll in to balls of desired portions
& freeze. Eat frozen. Very good for diabetics.
