Chocolate Cheese Pie
Ingredients:
***Chocolate Graham Crust***
1 1/2 cup graham crackers crumbs
1/4 cup brown sugar, packed
1/8 teaspoon ground nutmeg
1/3 cup melted butter or regular
margarine
1 square (1 ounce size) unsweetened chocolate, melted and cooled.
***Filling***
6 ounces pkg. semisweet chocolate pieces
8 ounces cream cheese, softened
3/4 cup brown sugar, packed
1/8 teaspoon salt
1 teaspoon vanilla
2 eggs, separated
1 cup heavy cream, whipped

Directions:

Prepare Chocolate Graham Crust:

Combine graham crackers crumbs, brown sugar, nutmeg, melted butter, and
melted chocolate. Mix thoroughly. Press mixture into a 9 inch pie plate.
Chill until
firm.

Prepare Filling: Melt chocolate pieces over hot water. Cool 10 minutes.
Blend together cream cheese, 1/2 cup of the light brown sugar, salt, and
vanilla
in bowl, using electric mixer at high speed. Beat in the yolks, one at a
time, beating well after each addition. Beat in cooled chocolate.

Beat egg whites in another bowl until stiff peaks form, using electric
mixer at high speed. Gradually beat in remaining 1/4 cup sugar. Beat
until stiff,
glossy peaks form.

Fold chocolate mixture into egg whites. Then fold in whipped cream.

Pour mixture into crust, reserving one fourth of the mixture for
decorating. Chill until filling is almost set. With tapered spoon, drop
reserved mixture
in mounds over top of pie. Cover and chill overnight.
