PICNIC SANDWICH
1 whole, round loaf bread of choice 1/ 2 cup basil pesto 2 cups spinach leaves 1/ 2 pound smoked turkey breast, sliced at deli or packaged 1/ 2 pound roast beef, sliced at deli or packaged 1/ 2 cucumber, sliced thin 1/ 2 pound cheese of choice, sliced at deli or packaged 1 medium tomato, sliced 1. Using a long, serrated knife, slice a circular, 1- to 2-inch top from the loaf, as you would a lid for a jack o'lantern. 2. Using your hands, hollow out the loaf, leaving a 1- to 2-inch crust in the shape of a bowl, reserving pieces for croutons or bread crumbs. 3. Spread half the pesto across the bottom of the bread bowl. Line with spinach leaves. 4. Follow spinach with turkey and roast beef slices, tucking edges of the meat into the sides of the bowl. Follow with cucumbers, cheese and tomato slices. 5. Spread the rest of the pesto on the top slice of bread and place atop the loaf. Wrap the sandwich with plastic wrap and foil. Chill until ready to eat. 6. Slice up to eight wedges from the round loaf and serve. Serves eight.
