This is based on a russian recipe that my friend Immigrant told me about
and I got it from a book she recommended. I haven't tried it but it
sounds yummy:
Cheese Balls In Chocolate
12 ounces Farmer's cheese
4 ounces cream cheese
7 tablespoons sugar
2 large egg yolks, lightly beaten
1-1/2 teaspoons vanilla extract
12 ounces bittersweet chocolate
3 tablespoons solid shortening
Using a food processor or an electric mixer, combine the cheeses, sugar
and egg yolks until smooth. Transfer to a bowl and add the vanilla. Wrap
the mixture into a double thickness of damp cheesecloth and place in a
colander set over a bowl. Fold the ends of the cheesecloth over the top.
Put a small plate on top of the cheesecloth. Put a 2-pound weight, such
as a can, over the plate. Refrigerate overnight. Unwrap the cheese
mixture and form it with your hands into 1-1/2-inch balls. Place the
balls on a plate and freeze to firm up, for 30 minutes. Melt the
chocolate and shortening in a heavy saucepan over low heat, stirring
constantly. Allow the chocolate to cool to lukewarm. Remove the cheese
balls from the freezer. Insert a toothpick into the center of a ball and
dip the ball into chocolate, covering it completely. Then dab a small
amount of chocolate over the toothpick hole. Repeat with the rest of the
cheese balls. Refrigerate until the chocolate is set.
