Emma's PERFECTION CHICKEN SALAD

 

2 c. cut-up cold cooked chicken (large chunks)

1 c. cut-up celery, cut

1/2-inch pieces

1 Tbsp. lemon juice

salt and pepper to taste

1/2 c. mayonnaise

3 hard-cooked eggs, boiled, cut up

1/3 cup sweet pickle relish (optional)

 

Mix together the chicken, celery, lemon juice, salt and

pepper. Add the mayonnaise and carefully fold in the eggs.

Chill thoroughly. Arrange a mound in each lettuce cup.

Garnish with olives or small sweet pickles and parsley.

Serves 6.

For variation in serving this chicken salad, cut toma-

toes almost through into 6 sections so as to open like a

flower. Fill center with chicken salad. Sprinkle top with

hard-cooked eggs which have been sieved. Serves 6.
