Course carrot cakes always freeze well. Someone sent me a recipe for chocolate cake in a mug just recently. Here's one for carrot cake. Preheat oven 350 degress. Spray inside of mug with nonstick cooking spray. Combine in a small bowl; 5 Tblsp all-purpose flour 2 Tblsp shredded coconut 2 Tblsp granulated sugar 1 Tblsp packed brown sugar 1 Tblsp each currants,walnuts and baking powder 1/2 tsp ground cinnamon 1/8 tsp salt 2 Tblsp grated carrot 2 Tblsp vegetable oil 1 egg Stir until well blended--pour into prepared mug Bake 25 minutes or until toothpick inserted into center comes out clean. Put/seal 1/4 cup powdered sugar and 1 tsp milk into a small food storage bag; seal and knead until well blended.
