Parmesan Zucchini 
4 - 6 fresh zucchini, coarsely chopped
One quarter cup butter
1 tsp. salt
Pepper to taste
1 Tbsp. lemon juice
Two thirds cup fresh grated Parmesan cheese 
Saute zucchini in butter with salt, pepper and lemon juice, sprinkle
with Parmesan cheese and serve. 
The Skinny: Use low fat Parmesan.
