Cajun Supper 1 tbls. oil 1 large onion, chopped 1 cup 1 med. bellpepper chopped 1 cup 2 garlic cloves finely chopped 1 cup uncooked reg. long grain rice 1 14 ox. can broth, your choice 1 cup frozen niblet corn 1 tbls. worcestershire sauce 1 15 oz. can blackyeye peas rinsed and drained 2 cans Rotel or 1 can stewed tomatoes heat oil in pan add onion, bell pepper,and garlic cook 5 mins, stirring often. Stir in rice, cook 2 to 3 mins. Stir in broth, heat to boiling. Reduce to simmer for 15 mins. Add in everything else cover and simmer for up to 10 mins, till veggies and rice are tender. Make up a pan of corn bread and enjoy. Janet
