Cajun Cabbage
  Bobbie Soileau, Opelousas, Louisiana
 
1 lb. ground meat
1 med. chopped green pepper 
1 med. chopped onion
2 minced garlic cloves
1 can rotel
1 8 oz. can tomatoe sauce
1/2 cup uncooked long grain rice
1 teas. salt
1/2 teas. basil
1/2 teas. oregano
1/2 teas. cayenne pepper
1/2 teas. black pepper
 as many shakes of hot sauce you can handle
1 small cabbage head chopped
1 cup  shredded colby cheese
 
cook meat,green pepper,onion, and garlic over med. heat till meat  is no 
longer pink. Stir in tomatoes tomato sauce,rice and seasonings. Spread  into a 
ungreased 9x13 baking pan. Top with cabbage and cheese. Cover and bake  350, 60 
to 75 mins, or till rice is done. 6 to 8 servings.
