Skillet Beef,Veggies,and Brown Rice
 
2 C. Chicken Broth
1 1/2 C. Uncooked Brown Rice
2 Med. Carrots sliced
2 teas.veg.oil
1/2 lb. top round beef cut in this strips
1/2 to 1 c. chopped onions
1 c. fresh snap peas, or canned peas
seasonings of your choice
 
In a sauce pan heat broth to boiling, add rice,and carrots return  to a boil. 
Reduce the heat and cover and simmer 8 mins. till carrots are tender.  Remove 
from heat and let set. In a 12 in. skillet heat oil, add meat and onions,  
cook about 8 mins. stirring often,until meat is brown and onions are tender.  
Stir in the rice mixture,peas,and your seasonings. Cover and cook anout 3 more  
mins. stirring just till peas are done, add small amounts of water to keep it  
from going dry. Serves 4
