Savory Vegetable Beef Soup
When it's cold snowy and icy outside, 
this is the soup that warms the insides.
1-3/4 cups beef broth {I use Swanson} 
2 medium potatoes, cut into cubes 
1 cup cubed cooked beef 
3 cups vegetable juice {I use V8} 
1 can {8 oz.} whole peeled tomatoes, cut 
1 bag {16 oz.} frozen mixed vegetables, {I use fresh veggies} 
1/4 tsp. dried thyme leaves, crushed 
1/8 tsp. ground black pepper
Place broth and potatoes in saucepan. Heat to a boil. Cover and cook
over low heat 5 minutes, or until potatoes are tender. Add beef,
vegetable juice, tomatoes, vegetables, thyme and black pepper. Cover
and cook 15 minutes or until frozen veggies are tender. 
Serves: 6  
  
Note: if using fresh veggies, cook them along 
with the potatoes in the broth.
