Savory Red Cabbage
2 tbsp canola oil
1 medium onion, diced
1 large red cabbage, cut in very thin slices, discard very thick white stems
1 large apple, peeled, cored and cut into wedges
1/2 c. raisins
1/2 c. white vinegar
3/4 c. water
Salt and pepper to taste
Heat oil in large pot and saute onion until translucent. Add cabbage,
apple and raisins. Immediately add vinegar and water.
Cover and cook 45 minutes on low heat, stirring occasionally. Add a
little more water if cabbage gets too dry. Add salt and pepper to
taste.
Serve with potatoes for a strictly vegetarian meal; or with turkey or
chicken.
Yield 4 servings.
