Sesame Green Beans
2 lb. green beans, ends trimmed
2 medium carrots, cut into matchstick thin strips
3 tbsp soy sauce
1 tbsp salad oil
2 tsp sesame seeds
1 tbsp Oriental sesame oil
In large Dutch oven or saucepot, over high heat, in 1-inch boiling
water heat carrots to boiling. Reduce heat to medium and cook 2-3
minutes until carrots are just tender. With slotted spoon remove
carrots to plate; set aside.
In boiling water over high heat, heat green beans to boiling. Reduce
heat to low. Cover and simmer 5-10 minutes, stirring occasionally,
until beans are tender-crisp. Drain. Return beans to pot. Add soy
sauce and salad oil. Over medium-low heat, cook green beans about 10
minutes longer, stirring frequently to blend flavors.
While beans are cooking, in small saucepan over medium heat, toast
sesame seeds until golden brown; stirring and shaking saucepan
frequently.
To serve, add carrots to green beans. Stir in sesame oil. Arrange
vegetables on platter and sprinkle with toasted sesame seeds.
Makes 10 servings.
