The way it was made before ground meat.

2 Tbl. Spoon Lard to brown meat with

Meat 2 # good beef sirloin boneless roast cut into small cubes

Toms 3 Cup crushed

Onions chopped 3 cups packed

Green. OR Red. Bell Peppers 1 large

Garlic 2 table spoons chopped fresh

Sugar 1 tea spoon or to taste

Chili powder 4 Tbl_____

Cumin powder 3 Tbl______

Paprika powder 3 Tbl

Salt to taste

Blk. Pep. To taste

Beans(chili) 4 Cup

Celery 1 Cup chopped

Oregano 2 t dried

Tomato paste ΒΌ Cu

Beef stock 8 Cup

1 Cup Beans fully cooked to blend as a thickener

In a large skillet I take the lard and brown the meat. I then

place it in a pressure cooker with 1 Table spoon of chili

powder for 10 mi then let the press off

That will make the beef broth and make it tender.

I then fry my celery for about 10 min. then add the peppers for

10 now the onions for 10 then add the tomatoes, paste,

beef stock, whole beans and every thing except the meat and

beans to make a paste of.

Then simmer for 3 hrs

Stir every few minutes taste and re season. I like to serve

mine with a glob of sour cream and some chopped green onions.

Oyster crackers or plain soda crackers. Let every one add there

own hot sauce.

But when the darkness sets in, their true beauty is revealed only if there is
a light shining from within.
