BASIC FRUIT QUICHE CUSTARD 2 egg yolks 1 egg white 1/4-cup cream 1/2-teaspoon salt 1/4-cup butter, melted Juices from soaking fruit (see fruit quiche recipes) 2 teaspoons vanilla 1/3-cup confectioner's sugar Thoroughly mix ingredients with a wire whisk. Makes enough custard for 1 nine-inch quiche.
