Swedish Fruit Soup

1 12 oz. tub mixed dried fruits

3/4 cup raisins

4-inch stick cinnamon

3 cups water

~~~~~~
2 cups unsweetened pineapple juice
2 Tbsp quick-cooking tapioca
1/2 cup currant jelly (or grape jam)
1/4 cup sugar (or sugar replacement to equal 1/4 cup)
1/4 tsp salt
Halve large pieces of fruit. In a large saucepan combine mixed fruits,
raisins, cinnamon stick and water. Bring to a boil; reduce heat and
simmer, covered, for 10 minutes. Meanwhile, combine pineapple juice and
tapioca; let stand for 5 minutes. Add to cooked fruit mixture along with
jelly, sugar and salt. Return to a boil; reduce heat and simmer,
covered, for 5-10 minutes, stirring occasionally. Remove cinnamon stick
(I usually leave it in as it adds great taste to the soup). Serve warm
or chilled.  Enjoy.
