PUMPKIN SPICE COOKIES WITH RAISINS AND WALNUTS
----FOR THE COOKIES----
½ pound butter, softened
1 cup sugar
1 large egg
1 cup solid pack canned pumpkin
2¾ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
½ teaspoon ginger
½ teaspoon cloves
½ teaspoon salt
1½ cups raisins
1½ cups chopped walnuts
----FOR THE GLAZE----
2 cups powdered sugar
¼ cup water
TO MAKE THE COOKIES: In bowl of electric mixer or by hand, cream the butter
and sugar together, then mix in egg. Mix in pumpkin, and scrape the bowl.
In separate bowl, blend together dry ingredients. Add dry ingredients to
mixing bowl and mix, just until blended. Add raisins and walnuts to cookie
mixture.
Pre-heat oven to 375 degrees. Drop dough by rounded tablespoons onto greased
cookie sheets. Small ice cream scoop is ideal. Leave space for cookies to
spread.
Bake 10-15 minutes.
Check cookies after 10 minutes. Push down with back of a spoon, as they tend
to mound a bit.
They are done when they turn a little golden and the middle springs back
when lightly poked. Let cool while making glaze.
TO MAKE THE GLAZE: Stir water in to powdered sugar. Add just enough water to
make a spreadable glaze.
Spread glaze on top of cooled cookies, and let set.
Makes about 45 cookies.
