Eggplant Supreme with Meat Sauce 1 eggplant 1 c.bread crumbs 1 c. grated cheese Peel and slice eggplant in 12 slices. Lay 6 slices in greased casserole. Add 1/2 of meat sauce and 1/2 of grated cheese; sprinkle with bread crumbs. Add remaining eggplant, cover with meat sauce, rest of cheese and bread crumbs. Bake at 375 until tender. Meat Sauce 1 lb. ground beef 1/2 c. celery; chopped 1/2 c. onion; chopped 1/2 c. green pepper; chopped 2 c. canned tomatoes 1 tsp. Worcestershire sauce 1/4 tsp. salt 1 clove garlic, minced (or garlic powder) 1/4 tsp. chili powder Brown meat; add celery, onion and green pepper. Cook 5 minutes. Add tomatoes and seasonings. Cover and simmer for 30 minutes.
